Ingredients

4 large medium zucchini, organic (spiralized)
1.5 pounds chicken breast, skinless and diced
2 cups cherry tomatoes, halved
5 cloves garlic, minced
3 tablespoons extra virgin olive oil
1/4 cup fresh lemon juice
1/4 cup crumbled feta cheese (halal;
50g fresh basil, chopped
1 teaspoon olive oil (for added richness;
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon sea salt

Instructions

Using a spiralizer, create noodles from zucchini. Sprinkle 3/4 tsp salt over noodles, toss, and let drain 10-15 minutes in colander
While zucchini drains, heat 3 tbsp olive oil in a large pan on medium-high. Add diced chicken and cook 6-8 minutes until golden and cooked through
Push chicken to one side. Add minced garlic and cook 2 minutes until fragrant
Add cherry tomatoes to the pan; sauté 4-5 minutes until slightly softened and bursted
Remove pan from heat. Mix in lemon juice, crumbled feta cheese, fresh basil, and remaining spices
Combine chicken mixture with drained zucchini noodles in the pan. Toss gently to coat everything evenly
Transfer to serving plates and garnish with additional basil if desired

Notes

For best texture, do not skip the salting step for zucchini
Use halal certifications for feta cheese if required
Cherry tomatoes should be perfectly ripe for ideal burst effect
Meal preps well in airtight containers for up to 2 days
