Ingredients
2 cups fresh raspberries
2 cups low fat cottage cheese
1 cup plain Greek yogurt
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1 teaspoon lemon zest
1/4 teaspoon fine sea salt
1/2 cup optional whipped cream or coconut cream
Fresh mint leaves for garnish
Instructions
Blend cottage cheese, Greek yogurt, honey, vanilla extract, lemon zest, and sea salt in a blender until smooth
Gently fold in mashed fresh raspberries
Optional: top each cup with whipped cream or coconut cream
Pour mixture into 4 individual cups or ramekins
Refrigerate for at least 1 hour before serving
Notes
Substitute coconut cream for animal-based mousse if needed
Can customize with other berries for variation
Best served chilled
Mousse will firm up further in the fridge after 2-4 hours
