6 oz smoked salmon (fresh or individual flakes)
1 medium cucumber (about 6 oz), thinly sliced into 12 rounds
8 oz soft cream cheese (low-fat or full-fat)
1 tbsp fresh lemon juice
1 tsp chopped fresh dill (or ½ tsp dried)
¼ tsp black pepper
¼ tsp garlic powder
Optional: 2 tbsp sliced scallions for garnish
Instructions
Thinly slice cucumber into 12 even rounds
Spread 1 tbsp cream cheese mixture onto each slice
Top with 1–2 tsp smoked salmon flakes
Roll tightly into compact cylinders
Chill for 5–10 minutes before serving
Arrange on a plate with lemon wedges and scallions
Notes
For firmer rolls, use ½ tsp olive oil to brush cucumber slices
Prep up to 6 hours ahead; store chilled
Substitute baby cucumbers for single-roll convenience
Vegetarian option: omit salmon and use sautéed spinach
