Ingredients

2 large zucchinis
1 cup cherry tomatoes (halved)

Instructions

Zucchini preparation: Spiralize or use a vegetable peeler to create thin zucchini ribbons.
In a large bowl, add zucchini ribbons, cherry tomatoes, red onion, parsley, and shrimp.
In a small bowl, whisk together lemon juice, olive oil, garlic powder, salt, and black pepper to make the dressing.
Pour the dressing over the salad, toss to coat evenly.
