Ingredients
1 lb shrimp (peeled and deveined)
2 large zucchinis
1 cup cherry tomatoes (halved)
1/4 cup red onion (thinly sliced)
1/4 cup fresh parsley (chopped)
2 tbsp lemon juice
2 tbsp olive oil
1 tsp garlic powder
Salt to taste
Black pepper to taste
Instructions
Zucchini preparation: Spiralize or use a vegetable peeler to create thin zucchini ribbons.
In a large bowl, add zucchini ribbons, cherry tomatoes, red onion, parsley, and shrimp.
In a small bowl, whisk together lemon juice, olive oil, garlic powder, salt, and black pepper to make the dressing.
Pour the dressing over the salad, toss to coat evenly.
Serve fresh and enjoy!
Notes
Spiralizing the zucchini adds a beautiful texture; use a hand-held spiralizer for easy prep.
Dressing can be made in advance.
Store leftovers in an airtight container in the fridge for up to 24 hours.
Optional: Add red pepper flakes for a touch of heat or fresh basil for extra aroma.
