Skillet steak (top round or flank steak), 1.5 pounds
1 medium zucchini, spiralized
Olive oil, 1 tbsp
Garlic, 3 cloves, minced
Diced tomatoes, 1.5 cups (canned or fresh)
Fresh basil or parsley, chopped
Salt and black pepper, to taste
Olive oil (for steak, as needed)
Red pepper flakes (optional for heat)
Instructions
Heat skillet over medium-high heat; pat steak dry with paper towels.
Sear steak in hot skillet until browned (1-2 minutes per side). Remove and set aside.
Add zucchini noodles to skillet; cook 2-3 minutes to soften slightly, stirring to avoid sticking.
Add olive oil, garlic, and red pepper flakes. Return steak to skillet.
Stir in tomatoes, herbs, salt, and pepper. Simmer 5 minutes to thicken sauce.
Serve immediately or let rest 5 minutes for juicier steak.
