Ingredients
2 (5-ounce) cans tuna (in water), drained
2 tablespoons mayonnaise (full-fat or light)
1 teaspoon dijon mustard (non-alcoholic)
1 tablespoon fresh dill, chopped
1 teaspoon lemon juice
1 large English cucumber
Pinch of salt
Pinch of black pepper
Instructions
Prep cucumber by slicing into 1/2-inch rounds
Using a small spoon, scoop out centers of cucumber rounds to create ‘bowls’
In a bowl, combine tuna, mayonnaise, dijon mustard, dill, lemon juice, salt, and pepper
Fill each cucumber bowl with the tuna mixture
Chill for 10-15 minutes to set if desired
Notes
For best results, use firm, fresh cucumbers
Chilling firms the filling and enhances flavors
Substitute non-alcoholic dijon mustard if unavailable
Store in airtight container for up to 2 days
