Ingredients
10 slices of low-sodium turkey bacon
10 slices of cooked and cooled sliced turkey breast
1 small English cucumber, peeled and sliced into ribbons
4 ounces cream cheese, softened
1 tablespoon chopped fresh dill or parsley (or a mix)
Juice of ½ a lemon (optional)
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Lay turkey bacon slices in a single layer on a baking sheet lined with parchment paper.
Bake for 10 minutes or until crispy. Allow to cool briefly.
On each piece of cooked turkey bacon, place a slice of turkey breast.
Spread a dollop of softened cream cheese on the turkey, and top with a cucumber ribbon and a sprinkle of herbs.
Carefully roll up each combination and secure with a toothpick if needed.
Repeat with remaining ingredients.
Serve immediately or refrigerate for later.
Notes
For a dairy-free version, substitute vegan cream cheese.
Customize with additional herbs like cilantro, basil, or chili flakes.
