6 large eggs
1/2 cup whole milk
8 oz shredded sharp cheddar cheese
20 slices fully cooked turkey bacon
1/4 cup chopped green onions
Pinch of salt and pepper
Instructions
Preheat oven to 375°F (190°C)
Cook turkey bacon in a skillet until crispy, about 5 minutes
Crumble cooked bacon into small pieces
Whisk eggs, milk, salt, and pepper in a bowl until smooth
Fold in shredded cheddar cheese and crumbled turkey bacon
Divide mixture evenly into 12 parchment-lined mini muffin cups
Bake for 25 minutes or until center is set
Let cool for 5 minutes before removing from tins
Sprinkle chopped green onions on top after baking
Notes
Use parchment paper to slide egg bites out easily
For extra protein, double the cheddar or add diced cooked turkey
Freeze in an airtight container for up to 3 months (reheat at 350°F)
Add spinach or diced tomatoes for variety
