Ingredients

1 cucumber, chopped
1/2 cup chopped dill pickle or red onion
1/2 cup chopped cherry tomatoes
1 cup plain Greek yogurt
1 tbsp olive oil
1 lemon (zested and juiced)
2 cloves garlic, minced
1 tsp dried oregano
Salt and pepper
cilantro or parsley for garnish

Instructions

Heat olive oil in a skillet over medium-high heat.
Add ground turkey, cook until browned and cooked through (6-8 mins), season with oregano, garlic, salt, and pepper.
Add chopped cucumber, tomatoes, and red onion to the pan; sauté 3-4 minutes.
In a bowl, mix Greek yogurt with lemon juice, zest, and a pinch of salt.
Divide turkey and vegetable mixture onto plates.
