Ingredients
8 oz lean ground turkey, fully cooked
1 medium cucumber
4 oz cream cheese, softened
1 tbsp fresh dill, finely chopped
1 tsp lemon zest
1/4 cup chives, finely chopped
2 tbsp olive oil (for baking sheet)
Salt and pepper to taste
Instructions
Prep baking sheet with olive oil
Julienne cucumber into thin, long ribbons
Spread cream cheese over each turkey slice
Top with cucumber ribbons, dill, chives, and lemon zest
Tightly roll each turkey slice into a pinwheel
Cut each roll into 3-4 bite-sized pieces
Serve chilled or at room temperature
Notes
Use a mandoline for uniform cucumber ribbons
Customize herbs with parsley or cilantro if preferred
Store in airtight container for up to 2 days
