Ingredients
1 lb ground turkey breast
1/2 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tbsp olive oil
1 tsp lemon zest
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups cucumber (peeled, julienned)
1/2 cup red onion (thinly sliced)
2 cups tzatziki sauce
1 cup cherry tomatoes, halved
1/2 cup fresh dill, chopped
1 tbsp olive oil for drizzle
Additional salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Combine ground turkey, breadcrumbs, egg, garlic, lemon zest, oregano, salt, and pepper in a bowl. Form into 20-25 meatballs.
Place meatballs on a baking sheet with olive oil. Bake for 12-14 minutes until cooked through.
Prepare tzatziki by combining it with cucumber, red onion, and 1/2 of the dill. Let chill 10 minutes.
To serve: Toss warm meatballs with tzatziki mixture, cherry tomatoes, and remaining dill. Drizzle with olive oil and season with salt/pepper.
Notes
For halal certification, use kosher-certified turkey and tzatziki.
Substitute breadcrumbs with psyllium husk for a gluten-free version.
Meatballs can be grilled or pan-seared for alternative cooking methods.
Store leftovers in an airtight container for up to 3 days.
