1 medium zucchini (sliced)
1 cup shredded pepper jack cheese
1/2 small onion (diced)
2 garlic cloves (minced)
1 tsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp paprika
1/4 tsp ground cumin
1 Tbsp chopped fresh cilantro (optional)
2 Tbsp water (as needed)
Instructions
Preheat oven to 375°F (190°C)
Heat oil in oven-safe skillet over medium heat
Cook turkey until browned and most moisture evaporated
Add onion and garlic; cook 2 minutes
Stir in zucchini, spices, and water
Spread in even layer, top with cheese
Bake 20-25 minutes until golden and bubbly
Let rest 5 minutes before serving
