Ingredients
4 turkey sausages (lean)
1 medium zucchini (sliced)
1 small onion (diced)
2 garlic cloves (minced)
1 tbsp olive oil
1 cup diced tomatoes (canned or fresh)
1 tsp Italian seasoning
Salt and pepper to taste
Optional: 1 tbsp chopped fresh parsley
Instructions
Heat olive oil in a skillet over medium heat.
Add turkey sausages; cook 5-7 minutes until browned.
Remove sausages and sauté onion and garlic until fragrant.
Add zucchini and cook 3-4 minutes until tender.
Incorporate tomatoes, Italian seasoning, and a splash of water if needed.
Return sausages to the pan and simmer 5-7 minutes.
Garnish with parsley if desired.
Notes
Use a non-stick skillet for easier browning.
Adjust herbs to personal taste.
Store cooled portions in the fridge for 3 days.
