1 head cauliflower, cut into chips
1 lb (450g) lean ground turkey
1 tbsp olive oil
1 tsp taco seasoning (or homemade blend: chili powder, cumin, paprika, garlic powder, onion powder)
1/2 cup (120g) shredded cheddar or mozzarella cheese
1/4 cup (40g) diced tomatoes
1/4 cup (40g) diced fresh onion
1/4 cup (15g) chopped cilantro
1/4 cup (60g) mashed avocado
1 tbsp lime juice
Salt and pepper to taste
Instructions
Preheat oven to 450°F (230°C)
Arrange cauliflower florets on a parchment-lined baking sheet, drizzle with olive oil, and season with salt and pepper
Roast for 20-25 minutes until golden and crispy
Cook ground turkey in a skillet over medium heat, crumbling into pieces, then add taco seasoning and simmer for 5 minutes
Divide roasted cauliflower into bowls, top with seasoned turkey, melted cheese, tomatoes, onions, cilantro, and avocado-lime crema (mash avocado with lime juice)
Notes
Customize with jalapeños or hot sauce for heat
Use lactose-free cheese if avoiding dairy
Store leftover roasted cauliflower chips in an airtight container for up to 3 days
