Ingredients
1 lb ground turkey
1 cup diced cucumber
1 cup cherry tomatoes, halved
1 bell pepper, diced
1/2 cup frozen corn
1/4 cup black beans, canned or cooked
1 lime, juiced
1 tbsp taco seasoning (no pork/meat products)
1/4 cup chopped cilantro
1/4 cup diced avocado
1/4 cup Greek yogurt
1/2 tsp olive oil
Optional: lettuce, tortilla chips
Instructions
Heat olive oil in a skillet over medium heat.
Add ground turkey; cook until browned and fully cooked (about 5–7 minutes).
Stir in taco seasoning and 1 tbsp water until turkey is well-coated.
Let turkey cool slightly.
Layer cooled turkey over sliced cucumber in bowls.
Top with cherry tomatoes, bell pepper, corn, black beans, cilantro, avocado, and Greek yogurt.
Drizzle with lime juice to serve.
Notes
Prepare components in advance for meal prepping.
Substitute Greek yogurt with plain non-dairy yogurt if preferred.
Use pre-chopped veggies to save time.
