Ingredients
4 medium zucchinis
1 pound lean ground turkey
1 cup diced onion
1/2 cup chopped bell pepper
1 cup canned black beans, drained
2 tsp taco seasoning
1 tsp ground cumin
1/2 tsp smoked paprika
1 cup shredded Mexican-blend cheese
1 tbsp olive oil
Optional toppings: avocado, fresh cilantro, lime wedge
Instructions
Preheat oven to 375°F (190°C)
Cut zucchinis lengthwise, remove seeds with a spoon
Sauté onion, bell pepper, and olive oil until softened
Add ground turkey, cook until browned
Mix in taco seasoning, cumin, paprika, and black beans
Stuff mixture into zucchini boats
Top with cheese and bake 20-25 minutes until zucchini is tender
Notes
Use halal-certified turkey if required
Can substitute black beans for corn
Make filling ahead and refrigerate until ready to stuff
