- 2½ teaspoons premium unflavored gelatin powder, approximately 7g
- ¼ cup cold filtered or distilled water, for blooming
- 2 cups fresh fruit juice or flavored liquid
- 3 tablespoons granulated sugar
- 1 tablespoon fresh lemon juice
- ½ teaspoon vanilla extract, optional
- 1 cup fresh berries or fruit garnish, optional
- Edible glitter or fresh mint, optional, for garnish
Instructions
- Pour the cold filtered water into a small, clean bowl.
- Sprinkle the premium unflavored gelatin powder evenly across the surface of the water.
- Allow the gelatin to bloom undisturbed for 5 minutes.
- Combine the fresh fruit juice and granulated sugar in a medium saucepan.
- Heat the mixture over medium heat until it reaches approximately 150°F.
- Stir in the fresh lemon juice.
- Remove the saucepan from the heat and allow the mixture to cool for 2 minutes.
- Pour the warm juice mixture slowly into the bloomed gelatin while whisking gently and continuously.
- Whisk for approximately 2 minutes until the gelatin dissolves completely and no lumps remain.
- Add the vanilla extract, if using, and whisk until evenly combined.
- Strain the mixture through a fine-mesh sieve lined with cheesecloth into a clean bowl.
- Allow the strained mixture to cool to room temperature for 15 to 20 minutes.
- Pour the cooled gelatin mixture into serving glasses, molds, or a large serving bowl.
- Refrigerate on a level shelf for 2 hours without disturbing.
- Check that the gelatin has reached a soft-set stage and gently add fresh berries or fruit garnish, if desired.
- Return the gelatin to the refrigerator for an additional 2 hours until completely set.
- Garnish with edible glitter or fresh mint before serving, if desired.
Notes
Bloom the gelatin fully in cold filtered water before combining with the warm juice mixture. Keep the liquid near 150°F, strain before chilling, and refrigerate undisturbed for the clearest, smoothest finish.
