Ingredients

  • 2 cups fresh mango puree
  • 1 can sweetened condensed milk
  • 16 oz Cool Whip, thawed
  • 1.5 teaspoons mild curry powder
  • 2 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 2 to 3 cardamom pods, crushed, optional

Instructions

  1. Peel the ripe mangoes.
  2. Remove the large center pit completely.
  3. Add the mango flesh to a food processor or blender.
  4. Blend until completely smooth.
  5. Strain the mango puree through a fine-mesh sieve to remove any fibers.
  6. Measure exactly 2 cups of mango puree into a large mixing bowl.
  7. Add the sweetened condensed milk.
  8. Stir thoroughly until completely combined.
  9. Add fresh lime juice.
  10. Add vanilla extract.
  11. Sprinkle in mild curry powder.
  12. Add sea salt.
  13. Add crushed cardamom pods if using.
  14. Whisk for 2 minutes until the curry powder and salt are evenly distributed.
  15. Transfer the thawed Cool Whip to a separate large bowl.
  16. Pour half of the mango mixture into the Cool Whip.
  17. Fold gently with a rubber spatula using downward and upward motions.
  18. Add the remaining mango mixture.
  19. Continue folding until no white streaks remain and the mixture is a uniform light peach color.
  20. Transfer the mixture to a freezer-safe container with a lid.
  21. Smooth the top with a spatula.
  22. Cover the surface tightly with plastic wrap.
  23. Place the lid on the container.
  24. Freeze for at least 4 hours or overnight.
  25. Remove from the freezer 10 minutes before serving.
  26. Scoop and serve chilled.

Notes

Use ripe fragrant mangoes, fold gently instead of stirring, and cover the surface with plastic wrap before freezing so this instant mango ice cream with cool whip curry stays creamy and free of ice crystals.
