Instructions

  1. Pour one cup of unsweetened fruit juice into a mixing bowl at room temperature.
  2. Sprinkle two packets of unflavored gelatin powder evenly across the juice surface.
  3. Wait five minutes without stirring to allow the gelatin to bloom.
  4. Boil one cup of water in a kettle or saucepan.
  5. Pour the boiling water directly into the bloomed gelatin mixture.
  6. Stir continuously for two minutes until all gelatin granules dissolve completely.
  7. Add one additional cup of cold unsweetened juice to the gelatin mixture.
  8. Place about ten ice cubes into the bowl.
  9. Stir constantly for three minutes until the mixture thickens but remains pourable.
  10. Remove any unmelted ice cubes.
  11. Fold diced strawberries and blueberries gently into the partially set gelatin.
  12. Distribute fruit evenly throughout the mixture.
  13. Pour the mixture into individual serving cups or one large serving dish.
  14. Refrigerate for six hours or until completely firm and jiggly.
  15. Top with fresh mint leaves or coconut flakes immediately before serving if desired.

Notes
