Instructions

  1. Bring 2 cups of water to a rolling boil in a medium saucepan over medium-high heat.
  2. Add the small sago pearls directly to the boiling water.
  3. Stir immediately to prevent clumping.
  4. Reduce heat to medium.
  5. Cook for 12 to 15 minutes, stirring frequently, until the sago becomes translucent with a small white dot in the center.
  6. Drain the cooked sago through a fine-mesh strainer.
  7. Rinse under cold water for 2 minutes.
  8. Spread the cooked sago on a clean plate to cool completely.
  9. Peel the ripe mangoes.
  10. Slice the mango flesh away from the pit.
  11. Add the mango flesh to a blender or food processor.
  12. Blend until smooth and free of fibers.
  13. Pass the mango puree through a fine-mesh strainer to remove any remaining fibers.
  14. Pour the coconut milk into a large mixing bowl.
  15. Add condensed milk and sugar.
  16. Whisk thoroughly until completely combined.
  17. Stir in the smooth mango puree until the mixture is evenly golden.
  18. Add a pinch of salt.
  19. Taste and adjust sweetness if needed.
  20. Add the cooled sago pearls to the mango mixture.
  21. Fold gently until evenly distributed.
  22. Pour the mango sago pudding recipe into individual serving glasses or one large dessert bowl.
  23. Cover and refrigerate for at least 3 hours.
