Ingredients
Chicken Thighs (1.5 pounds) bone-in skin-on
Cremini Mushrooms (12 ounces) halved
Yukon Gold Potatoes (1.5 pounds) 1-inch cubes
Red Onion (1 large) 1-inch wedges
Garlic (4 cloves) minced
Olive Oil (3 tablespoons) extra virgin
Fresh Thyme (2 tablespoons) leaves stripped
Lemon (1) halved
Instructions
Preheat oven to 425°F (220°C)
Toss potatoes, mushrooms, onion, and garlic with 2 tablespoons olive oil, thyme, and salt/pepper
Arrange chicken thighs, skin-side up, on one half of the pan surrounded by vegetables
Drizzle remaining oil over chicken and season with salt/pepper
Place lemon halves on the pan
Roast for 35-40 minutes, flipping chicken halfway through

Space ingredients evenly for proper airflow
Replace cremini with button mushrooms if needed
