8 oz mushrooms (sliced)
1 medium onion (diced)
2 garlic cloves (minced)
2 tbsp olive oil
2 tbsp low-sodium soy sauce
1 tsp fresh thyme leaves
1/2 tsp black pepper
1 cup beef or vegetable broth
1 tbsp tomato paste (optional)
salt to taste
Instructions
Heat olive oil in a large skillet over medium-high
Brown beef, transferring to a bowl when done
Sauté onions and garlic until golden
Add mushrooms and cook until browned
Return beef to skillet, add broth, soy, thyme, pepper and tomato paste
Simmer 10 minutes, adjusting seasoning
