Beef sirloin or flank steak – 1 pound
Fresh spinach – 6 cups
Garlic – 3 cloves, minced
Ginger – 1 tablespoon, freshly grated
Soy sauce – 3 tablespoons
Cornstarch – 1 tablespoon
Vegetable oil – 2 tablespoons
Green onions – 2 tablespoons, chopped (optional for garnish)
Instructions
Cut beef into thin strips and slice against the grain.
Whisk soy sauce and cornstarch, set aside.
Heat oil in a wok or skillet over high heat.
Add beef and sear until browned (3-4 minutes), remove from pan.
Add garlic and ginger; sauté until aromatic.
Toss in spinach and stir until wilted (1-2 minutes).
Return beef to the pan, pour in sauce, and cook until thickened (2 minutes).
Garnish with green onions if desired.

Use room-temperature beef for even searing.
