Ingredients
Ground turkey (1 pound, 93/7 lean)
Broccoli florets (4 cups, fresh or frozen)
Yellow onion (1 medium, diced)
Garlic (3 cloves, minced)
Soy sauce (3 tablespoons, tamari for gluten-free)
Sesame oil (1 teaspoon)
Fresh ginger (1 tablespoon, grated)
Rice vinegar (1 tablespoon)
Cornstarch (2 tablespoons)
Green onions (2 slices)
Instructions
Heat 1 teaspoon sesame oil in a large skillet over medium-high heat
Add diced onion and sauté for 2 minutes until softened
Add minced garlic and grated ginger; cook for 1 minute until fragrant
Add ground turkey and cook until browned and no longer pink
Stir in broccoli florets and cook for 4-5 minutes until tender-crisp
In a small bowl, mix soy sauce, rice vinegar, and cornstarch
Pour sauce into skillet, stir to coat, and cook for 2-3 minutes until thickened
Top with sliced green onions before serving
Notes
Use tamari for gluten-free option
Shallots can substitute yellow onion
Garlic powder can replace fresh garlic (use 1 teaspoon)
Frozen broccoli works if thawed first
