Ingredients
1.5 lbs ground turkey
2 cups fresh spinach, chopped
1 cup frozen or fresh bell pepper strips (optional)
3 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp lower-sodium soy sauce
1 tbsp tamari or gluten-free soy sauce (optional)
1 tsp sesame oil
1 tsp rice vinegar
1/2 tsp dried basil or oregano
3/4 cup water or vegetable broth
1 tbsp cornstarch or arrowroot powder (mixed with 5 tsp water)
Cooked rice noodles or brown rice, for serving
Instructions
Preheat oven or heat oven broiler if using frozen spinach
Heat wok or large skillet over high heat (do not use non-stick)
Add turkey in a single layer and sear undisturbed for 3-4 minutes for browned edges
Stir-fry until no longer pink, breaking into small pieces
Push turkey to one side, sauté garlic and ginger for 1 minute
Add spinach and bell peppers, stir-fry 2-3 minutes until wilted but vibrant
Mix in soy sauce, tamari, sesame oil, vinegar, herbs, and 3/4 cup water
Bring to a simmer, then stir in cornstarch slurry
Cook 1-2 minutes until sauce thickens
Serve immediately over warm rice or noodles
Notes
For ideal texture, use day-old rice to prevent greasiness
Freeze cooked stir fry in airtight containers for up to 3 months
Swap greens with bok choy or broccoli during off-season
Use tamari for gluten-free option
Cook turkey in batches if pan is too crowded to sear properly
