Instructions
Preheat a large skillet or wok over medium-high heat and add vegetable oil.
Add ground turkey and cook until browned and cooked through (5–7 minutes).
Stir in minced garlic and ginger, sauté for 1 minute until fragrant.
Increase heat to high, add sliced zucchini, and stir fry for 5–6 minutes until crisp-tender.
Pour in soy sauce, stir to coat, and cook for 2–3 minutes to sizzle and meld flavors.
Serve immediately, optionally over rice or quinoa.
