Instructions
- Pour one-quarter cup cold water into a small mixing bowl, sprinkle one tablespoon of unflavored gelatin over it evenly, and allow to sit undisturbed for exactly two minutes to bloom.
- Slowly pour three-quarter cup of boiling water over the bloomed gelatin while stirring constantly for thirty to forty-five seconds until completely dissolved.
- Stir in one-half cup of unsweetened fruit juice concentrate, two to three tablespoons of natural sweetener, one tablespoon of fresh lemon juice, one-half teaspoon of vanilla extract, and a small pinch of sea salt until fully combined.
- Allow the hot gelatin mixture to cool to room temperature for approximately ten to fifteen minutes, stirring occasionally.
- Divide the cooled gelatin mixture evenly into eight small serving cups or one large serving bowl, and distribute optional fresh berries evenly.
- Cover and transfer immediately to the refrigerator to chill for a minimum of four hours, or preferably overnight, until fully set.
Notes
Bloom gelatin properly in cold water for exactly two minutes without stirring to prevent lumps and a grainy texture. Ensure the water is at a rolling boil to completely dissolve all particles. Select pure fruit juice concentrates with no additives or pectin to avoid interfering with the setting process.
