Instructions

  1. Wash the strawberries under cool running water to remove any dirt or debris.
  2. Dry the strawberries completely using paper towels because any remaining moisture will ruin the sugar coating.
  3. Remove the green stems from the fruit carefully without breaking the skin.
  4. Insert a wooden skewer through the base of each strawberry to hold them securely.
  5. Combine the granulated sugar and water in a medium saucepan over medium heat.
  6. Stir the mixture gently until the sugar dissolves completely before the syrup starts to boil.
  7. Stop stirring immediately once the syrup begins to bubble to prevent crystallization.
  8. Monitor the syrup temperature using a candy thermometer until it reaches 300 degrees Fahrenheit (hard-crack stage).
  9. Remove the saucepan from the heat once it hits the target temperature.
  10. Dip each strawberry quickly into the hot syrup, rotating the skewer to ensure an even, thin coating.
  11. Place the coated strawberries onto a sheet of parchment paper or a silicone baking mat to harden.
  12. Allow to cool at room temperature for at least 10 minutes until the shell is solid and glass-like.
