- 2 pounds cherry tomatoes
- 12 ounces feta cheese
- 1 pound penne or rigatoni pasta
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 6 garlic cloves, minced

- 1 cup fresh basil, loosely packed
- Salt and black pepper, to taste
- 6 quarts water, for pasta
- 1 cup reserved pasta water
Instructions
- Preheat the oven to 425°F.
- Line a large baking sheet with parchment paper.
- Rinse the cherry tomatoes.
- Halve the cherry tomatoes.
- Add the tomatoes to a large bowl.
- Add 1/4 cup extra-virgin olive oil, minced garlic, red pepper flakes, and a generous pinch of salt.
- Toss until the tomatoes are evenly coated.
- Spread the tomato mixture in a single layer on the prepared baking sheet, cut-side up.
- Roast for 15 to 20 minutes until the tomato skins collapse and the edges char slightly.
- Bring 6 quarts of salted water to a rolling boil in a large pot.
- Add the pasta and cook according to package directions until al dente.
- Reserve 1 cup of starchy pasta water before draining.
- Drain the pasta through a colander.
- Do not rinse the pasta.
- Transfer the roasted tomatoes to a large serving bowl.
- Scrape all pan juices into the bowl.
- Add the drained pasta directly to the roasted tomatoes.
- Crumble the feta cheese over the pasta and tomatoes.
- Drizzle with the remaining 2 tablespoons olive oil.
- Toss gently with two wooden spoons until the heat of the pasta softens the feta.
- Add reserved pasta water 1 tablespoon at a time until the sauce reaches a silky consistency.
- Tear the fresh basil into pieces.
- Fold the basil gently into the pasta just before serving.
- Taste and adjust with salt and freshly ground black pepper.
- Serve immediately while warm.
