Ingredients
Scale
- 1 lb Cod or Pollock (must be very fresh and chilled)
- 1 large Egg White (provides binding and elasticity)
- 2 tbsp Cornstarch (crucial for desired bounce)
- 1 tbsp Mirin (adds subtle sweetness)
- 1 tsp Sea Salt (enhances natural fish flavor)
Instructions
- Clean the white fish fillets thoroughly to remove any blood lines or skin fragments.
- Cut the fish into small, two-inch cubes for faster processing in your food processor.
- Chill the cubed fish in the refrigerator for at least thirty minutes prior to blending.
- Pulse the cold fish in a food processor until it reaches a very fine, smooth paste consistency.
- Add the egg white, cornstarch, mirin, and salt to the fish paste inside the processor.
- Blend the mixture for an additional sixty seconds to ensure everything integrates perfectly into the base.
- Shape the mixture into small logs or sticks to match the appearance of a standard viral imitation crab recipe.
- Steam the shaped fish logs for twelve minutes until they are firm throughout.
Notes
Keep your fish fillets ice-cold until the very moment you start processing to ensure the proteins bind correctly. Avoid blending for too long to prevent heating the protein. Store leftovers in an airtight glass container in the refrigerator for up to 3 days or wrap tightly in plastic then foil and freeze for up to 1 month.
