This viral queso swim chicken and rice recipe delivers a decadent, cheesy dinner experience by bathing tender chicken in a pool of golden, melted queso and fluffy rice.

  • Total Time: 45 Minutes
  • Yield: 6 People 1x

Ingredients

Scale
  • 1.5 lbs Chicken Breast (cut into bite-sized pieces)
  • 1.5 cups Long Grain Rice (uncooked and rinsed well)
  • 16 oz Queso Dip
  • 2 cups Chicken Broth (low sodium preferred)
  • 10 oz Diced Tomatoes (drained slightly)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit to ensure even baking.
  2. Grease a 9×13 inch casserole dish lightly with olive oil or cooking spray to prevent sticking.
  3. Whisk together the chicken broth, garlic powder, and onion powder in a medium mixing bowl.
  4. Combine the uncooked rice and the seasoned broth mixture directly inside the prepared casserole dish.
  5. Place the chicken breast pieces evenly over the top of the rice and liquid mixture.
  6. Spread the queso dip over the chicken pieces, allowing some of it to sink into the rice below.
  7. Cover the dish tightly with aluminum foil to trap the steam necessary for cooking the rice grains.
  8. Bake for 35 minutes or until the rice is tender.
  9. Remove the foil during the last 5 minutes of cooking to let the top crust slightly.

Notes

Always rinse white rice under cold water until clear to prevent a gummy texture. Ensure chicken pieces are cut uniformly so they cook at the exact same rate, and use a meat thermometer to check for an internal temperature of 165 degrees Fahrenheit. Allow the dish to rest for 5 minutes after baking so the sauce can thicken.
