- 1.5 lbs Chicken Breast (cut into bite-sized pieces)
- 1.5 cups Long Grain Rice (uncooked and rinsed well)
- 16 oz Queso Dip
- 2 cups Chicken Broth (low sodium preferred)
- 10 oz Diced Tomatoes (drained slightly)
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
Instructions
- Preheat your oven to 375 degrees Fahrenheit to ensure even baking.
- Grease a 9×13 inch casserole dish lightly with olive oil or cooking spray to prevent sticking.
- Whisk together the chicken broth, garlic powder, and onion powder in a medium mixing bowl.
- Combine the uncooked rice and the seasoned broth mixture directly inside the prepared casserole dish.
- Place the chicken breast pieces evenly over the top of the rice and liquid mixture.
- Spread the queso dip over the chicken pieces, allowing some of it to sink into the rice below.
- Cover the dish tightly with aluminum foil to trap the steam necessary for cooking the rice grains.
- Bake for 35 minutes or until the rice is tender.
- Remove the foil during the last 5 minutes of cooking to let the top crust slightly.
Notes
Always rinse white rice under cold water until clear to prevent a gummy texture. Ensure chicken pieces are cut uniformly so they cook at the exact same rate, and use a meat thermometer to check for an internal temperature of 165 degrees Fahrenheit. Allow the dish to rest for 5 minutes after baking so the sauce can thicken.
