- 6 packets unflavored gelatin powder, approximately 15g
- ½ cup fresh lemon juice
- 3 tablespoons raw honey
- 1 large fresh cucumber, diced
- 12–15 fresh mint leaves
- 3 cups filtered water
- 1 cup fresh mixed berries, such as blueberries, strawberries, and raspberries
- ¼ teaspoon turmeric powder
- 1 pinch sea salt
Instructions
- Measure three cups of filtered water into a medium saucepan and bring to a gentle simmer over medium heat.
- Pour the hot water into a large glass mixing bowl.
- Add the unflavored gelatin slowly while stirring constantly to prevent clumping.
- Continue stirring for two minutes until the gelatin dissolves completely and the mixture becomes smooth.
- Squeeze the fresh lemon juice into a small bowl and strain through a fine-mesh sieve to remove pulp.
- Add the strained lemon juice to the gelatin mixture and stir thoroughly for one minute.
- Add the raw honey and stir until completely incorporated.
- Dice the fresh cucumber into small pieces and add it to the gelatin mixture.
- Tear the fresh mint leaves by hand and stir them gently into the mixture.
- Sprinkle in the turmeric powder and whisk for one minute until evenly distributed.
- Add a small pinch of sea salt and stir to combine.
- Rinse and drain the mixed berries thoroughly.
- Fold the mixed berries gently into the gelatin mixture using a rubber spatula.
- Allow the mixture to cool at room temperature for approximately ten minutes.
- Divide the gelatin mixture evenly among glass containers or individual molds.
- Place the containers in the refrigerator and chill for four to six hours until completely set.
- Check that the gelatin holds its shape when tilted.
- Serve chilled or cover and refrigerate until ready to enjoy.
Notes
Use fresh ingredients for the brightest flavor and smoothest texture. Stir the gelatin thoroughly until fully dissolved, then allow the prepared mixture to chill undisturbed until completely set.
