Ingredients
- 8 cups mixed salad greens
- 1 cup fresh basil, packed
- ½ cup fresh parsley, packed
- ¼ cup fresh chives
- ¾ cup Greek yogurt
- 2 tablespoons fresh lemon juice
- 1 garlic clove, minced
- 1 large cucumber, seeded and diced
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, sliced
- ¼ cup sunflower seeds
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 to 2 tablespoons water, as needed
Instructions
- Combine the fresh basil, parsley, and chives in a food processor or blender.
- Add the Greek yogurt to the herbs.
- Add the minced garlic and fresh lemon juice.
- Pour in the olive oil gradually while blending.
- Blend on medium speed for 30 to 45 seconds until creamy and bright green.
- Add water 1 tablespoon at a time until the dressing is pourable but still creamy.
- Season with salt and pepper to taste.
- Transfer the dressing to a bowl or jar if making ahead.
- Wash and dry the mixed salad greens thoroughly.
- Cut the cucumber lengthwise and scrape out the watery center with a spoon.
- Dice the cucumber into bite-sized pieces.
- Halve the cherry tomatoes.
- Slice the avocado just before serving.
- Toast the sunflower seeds in a dry skillet over medium heat for 2 to 3 minutes if desired.
- Place the dried mixed greens in a large salad bowl or divide between serving bowls.
- Arrange the diced cucumber, halved cherry tomatoes, and sliced avocado over the greens.
- Scatter the sunflower seeds over the top.
- Drizzle the green goddess dressing over the salad, starting with a moderate amount.
- Toss gently with two forks or salad servers until everything is lightly coated.
- Taste and adjust seasoning if needed.
- Serve immediately.
Notes
Use fresh herbs only for the brightest flavor and color. Dry the greens completely so the dressing does not become watery. Add avocado right before serving to prevent browning, and start with less dressing so the salad stays crisp.
